Santa Fe Cattle Co.'s Ardmore, Okla. Restaurant Has Record Opening Week Sales

Tuscaloosa, Ala., and Ardmore, Okla. Prove Hungry for High-Quality, Reasonably Priced Family Steakhouse
BRENTWOOD, TN and ARDMORE, OK--(MARKET WIRE)--Jun 3, 2008 -- Santa Fe Holding Co., Inc. (Other OTC:SFHD.PK - News), the parent company of the Santa Fe Cattle Co. steak restaurant chain, today announced record-breaking opening sales for its newest location in Ardmore, Okla. The 23rd Santa Fe Cattle Co. "roadhouse" steak restaurant opened on May 5th in Tuscaloosa, Alabama, and the 24th location opened on May 19th in Ardmore, Oklahoma. The stores both had powerful sales in their opening week, with the Ardmore store ringing up record sales of more than $110,000 for the week, surpassing the previous opening week record of $103,000 achieved at the Troy, Ala., location in February 2008.
The results continue a trend of strong sales and revenue growth demonstrated by Santa Fe Cattle Co., one of the fastest growing concepts in the restaurant industry. The company is pursuing an aggressive yet proven growth strategy that will add 10 new locations in 2008 and 12 additional restaurants in 2009 -- doubling the number of current locations. Five new Santa Fe Cattle Co. restaurants are currently under construction, with openings slated for locations in McComb, Miss.; Ada, Okla.; Bixby, Okla.; and Albertville, Ala., during the next 5 months.
"All of our new stores are having outstanding opening sales numbers, which after a normal leveling off period generate over $3 million in annualized sales," said Santa Fe Founder and Chairman Danny York. "This is unheard of for a 5,947-square-foot restaurant seating 187 people. We've carefully and purposefully developed our formula which is: simply awesome food in a distinctive down-home casual atmosphere at a very reasonable price."
He added, "We must have the right recipe because customers are not only enjoying our food but are consistently asking how they can invest in the company."
York credits the fact that Santa Fe Cattle Co. fills a wide-open niche in the communities they select for their locations, as well as in the dining industry as a whole. By focusing on smaller towns and secondary markets for its new restaurants, Santa Fe Cattle Co. enjoys less expensive real estate, labor, and more stable local economies.
With gas over $4 a gallon in many areas, a lot of people are giving up vacations but they're not going to stop going out to eat. Each of the Santa Fe Cattle Co. restaurants has become a little attraction in town. All the new stores feature a fun, casual environment filled with local artifacts and whimsical décor such as the company's signature Big Ass® ceiling fans and natural stone.
But the primary attraction remains the food -- such as its USDA Choice steaks, which Santa Fe is able to offer at outstanding prices by cutting and aging in-house. The restaurants also are known for their ribs, fajitas, Texas Hills Country-influenced cuisine, signature homemade sauces, fresh-baked rolls with cinnamon butter and all the peanuts you can eat.

SFHD NEWS: CONFERENCE CALLL, June 5, 2008 11 am est. Will keep you posted here for details
Santa Fe Holding Company (OTC:SFHD), headquartered in Brentwood, Tennessee, is a restaurant holding company which currently owns and operates a chain of 22 Santa Fe Cattle Co. “roadhouse” steak restaurants. Its restaurants are located in Alabama, Georgia, Mississippi, Indiana, Tennessee, Kentucky and Oklahoma.
Santa Fe’s revenues increased 32.4% in 2006 to a record $21.6 million and were 286% higher than 2003 revenues. This growth reflects an increase in the chain from 6 units in 2003 to 12 units at year-end 2006 as well as higher average sales per restaurant. The Company did achieve its 2007 revenue goal of $33 million. In the first six months of 2007, Santa Fe generated revenues of $13.5 million and expanded its chain to 18 locations.
The Company’s business model centers on developing a network of casual dining steakhouse restaurants across the US that provide customers with quality food, exceptional service and a fun dining experience, all at a reasonable price. Its goal is to dominate the underserved, $10-12 dining niche of the steakhouse restaurant segment.
By year-end 2009, Santa Fe management expects to operate at least 40 restaurants and generate annual per store sales of approximately $3 million. Given the results already achieved under Mr. York’s leadership, we think these projections are reasonable and expect the Company to produce revenues approaching $100 million by year-end 2009.
Our 2009 revenue target is based on sales of $2.6 million per store and 40 restaurant locations. However, according to management, Santa Fe’s annualized sales per store already exceed $2.6 million and are expected to approach $3 million by 2009.
I have attached the latest Investor Packet from the company indicating their current growth status for your reference.
We will be expecting you in the conference call, June 5, 2008, Thursday 11:00 am EST.

Santa Fe Holding Company, Inc. Announced Today That It Will Open the Company's 24th Restaurant in Ardmore, OK on May 19, 2008
Thursday May 15, 9:30 am ET
BRENTWOOD, TN--(MARKET WIRE)--May 15, 2008 -- Santa Fe Holding Co., Inc. (Other OTC: - News), the parent company of Santa Fe Cattle Co., announced today that it has set the opening date of its newest restaurant. This will be the company's 24th location and will open on Monday, May 19th in Ardmore, Oklahoma. Santa Fe Holding Co. is a restaurant holding company which currently owns and operates 23 Santa Fe Cattle Co. restaurants located throughout 7 states.
The new store is located in the Ardmore Commons, a Burk Collins Development. This development will eventually have an 8 screen movie theater, is currently located next to a new Lowe's, and is less than two miles from one of the town's largest employers, the Michelin Tire Plant. Company Chairman Danny York noted, "Santa Fe Cattle Co., in my opinion, has the best location due to the high traffic count in front of the store and very little competition in the surrounding area." Mr. York went on to say, "This is our kind of market."
He went on to note that the Ardmore store will be one of many in the south Oklahoma state market. Currently Santa Fe Cattle Co. has eight locations in the Oklahoma City market.
York also said, "Oklahoma has been a great state for our concept and we plan on developing at least 12 more stores in that state over the next 2 years."
With the opening of Ardmore, Santa Fe Cattle Co. will have opened 4 new locations in 2008 with their latest opening taking place in Tuscaloosa, Alabama just two weeks ago.
"The Oklahoma market is vibrant and not experiencing the same slowdown the rest of the country seems to be concerned about," stated Don Clifford, Vice President of Real Estate. "One of the states top industries is oil and with oil prices remaining so high the economy seems to be buffered from the typical economic slowdown."
Mr. Clifford added, "We are excited to be positioned with six stores currently under development in Oklahoma."
The company currently has five new locations under construction, with all of those stores on schedule to open during the next two quarters. Santa Fe Cattle Co. is one of the fastest growing concepts in the restaurant industry, ending 2007 with total revenue up more than 57% over last year. The company currently has property bought or under contract to open 10 new stores in calendar year 2008.

Santa Fe restaurant chain finds new home in McComb

Danny York came to Pike County in 2007 to hunt deer and bagged a new location for his business. And the search for his quarry was inspired by lunch.
“We were waiting at the McComb airport to go back to Tennessee,” said York, founder and chairman of the Santa Fe Cattle Co., a restaurant chain based in Brentwood, Tenn. “The plane was delayed, and it was lunchtime.”
York said he and his companions went to a restaurant for lunch and he was amazed at the line of diners waiting to eat.
“I told my real estate guy who was with me to take a look at the area,” he said.
On Tuesday, York and company president John Davis were in McComb to break ground for what will be Santa Fe Cattle Co.’s 25th restaurant.
“I think we’ll do great here,” York said.
The company has restaurants in Tupelo and Columbus, and in Alabama, Georgia, Tennessee, Indiana, Kentucky and Oklahoma.
Santa Fe ended 2007 with $33.9 million in sales and projects reaching $61 to 62 million in sales this year, and anticipates opening 10 restaurants during 2008 — most of those in small towns.York said he initially looked at Jackson to locate his third Mississippi restaurant but decided to open a restaurant in the southern part of the state, and McComb fit the bill.
He anticipates that the McComb restaurant could be the hub of a group of three or four restaurants, with one in the Jackson area and in Hammond.
He said the company’s policy is to have a supervisor who lives in the area where a restaurant is located and oversee the operations of three to four restaurants.
McComb’s Santa Fe Cattle Co. restaurant will be built by Clark Construction Co., which is also building another restaurant for the company.
Clark Construction owner Brad Clark said his company developed a relationship with Santa Fe Cattle Co. in 2007.“We have worked with this development for several months and are delighted to bring Santa Fe to McComb,” Clark said. “Santa Fe will help fill a void in the full-service, sit-down restaurant and will provide up to 80 jobs for the area.
“We are proud to be associated with Santa Fe and be included in their future growth,” he said. “We also appreciate the support of the city of McComb and Mayor Zach Patterson and the Pike County Economic Development Foundation Director Britt Herrin.”
York has 20 years experience in the restaurant business, previously owning a multi-unit Western Sizzlin Steakhouse franchise and developing the Logan’s Roadhouse restaurant concept.
He began the concept for Santa Fe in 1996 and later sold his interest in the restaurant. He bought it back in 2003.
The restaurant offers a varied menu built around fresh, hand-cut steaks.“All of our meat is fresh and aged to a set of specifications,” York said. “All of our steaks are cut in-house.”
Besides the steaks, Santa Fe’s menu offers chicken and seafood, Tex-Mex and soups and salads.

Below is just a small portion of the newsletter write up:
"We find the Company attractive due to its solid revenue growth, Corporate expansion plans and management's experience.
"What's more, we believe some of the Company's key differentiators (weekly tracking of store sales by line item & in-house cutting and aging rather than purchasing pre-packaged and ready to use beef) may give Santa Fe an advantage over its competition, allowing improved profitability and better cost monitoring, in addition to a better quality and value of the restaurant's food menu."
