York outlines plans for latest restaurant venture

Santa Fe Cattle Co. to double size and reach eight states by '09

Local restaurant veteran Danny York is stepping on the gas with his latest venture, Brentwood-based Santa Fe Cattle Co.

While the casual dining sector is struggling – Roadhouse Grill filed for bankruptcy last fall and all three of O'Charley's concepts recently posted same-store sales drops of at least 2.6 percent – York plans to open 27 restaurants by the end of 2009.

The building blitz will more than double his current network and position Santa Fe for the next upswing. The company posted 2007 sales of about $30 million and York expects that number to top $55 million this year.

"It will give Santa Fe the opportunity to shine and continue to pick up market share," said York, chairman of Santa Fe's holding company and the owner of Bistro 215 and Merchants.

Oklahoma will receive the bulk of the two-year expansion plan with 10 locations, while Alabama will get five, Georgia two, and Mississippi, Louisiana and Indiana one each. York said he won't add locations in the Nashville metro and is focused more on cities of 50,000 people or less, where he likes to scout for locations near a Wal-Mart or Lowe's.

"These smaller markets often don't have a steakhouse. A big night out on the town has been Ruby Tuesday or Applebee's," he said.

Santa Fe Holding Co. said last week that same-store sales rose 2.4 percent in the first four weeks of the year. And the company's stock, which is traded on the Pink Sheets, has risen 65 percent since Santa Fe went public in a reverse merger in eight months ago.
